Breakfast Smoothie

This is a KETO inspired Paleo smoothie. I have actually been “gasp” working out four mornings a week with the kids in tow during the summer and now with school in session I go right after school drop off with the baby. When I get back home after 4:15 ish wake up, lunches, laundry, breakfast for kiddos, drop offs etc I am usually super unmotivated to cook myself breakfast! This hits the spot perfectly giving me a giant boost and keeping me full until lunch. It is low carb, high fat, fab protein and easy to make- I make one batch and it last two days- not separating or loosing it’s delicious flavor. The baby (18 months) goes crazy for it so I always give her a small glass while I am drinking mine.

Breakfast Smoothie:
Makes two servings

Combine the following ingredients in a high speed blender:
1 Can Full Fat Coconut Milk
2 TBS Chia Seeds
2 TBS Grass Fed Collagen
2 TBS Raw Cocao
1 TBS Maple Syrup

Blend until well combined and Chia Seeds are incorporated- add:
6 Ice Cubes
Blend once more on high for 15-30 seconds.
Divide into two servings. I store mine in a glass mason jar with a lid in the fridge.
