Zucchini Bread

One of the easiest vegetables to grow has got to Zucchini! We always end up with an excessive amount- we love making Zoodles with them, some i slice and freeze for future stews. Most ends up in bread. I make countless batches and freeze them for the school year- easiest addition to lunch box or for breakfast ever!

Here is my basic go to recipe, I sometimes add carrots, chocolate chips, orange zest to mix it up! I am working on a grain free option.

Pre heat oven 375

In a large bowl:

11/2 cups Organic Flour

1/4 Tsp Baking Powder

1/4 Tsp Baking Soda

pinch salt

1 Tsp Cinnamon

one small lemon zested

In a separate bowl combine:

1/4 cup Maple Syrup

1/4 Cup Coconut Oil soft

2 Large Eggs

2 cups shredded Zuchini

  • I shred mine then squeeze it in a cotton dish towel to remove access water- this step really helps with keeping the breast moist but not soggy.

stir well then add dry ingredients

**add 1/3 cup Raisins (optional) makes the bread in my opinion.

combine with a wooden spoon and pour into a greased loaf pan.

bake 40 minutes or until toothpick comes out clean
